The Grape Harvest and making of our OWN house wine
The whole of our restaurant is surrounded by one of the most amazing grape vines you will ever see! Not only does it provide a unique roof for our outdoor restaurant, but we also use the grapes to make our delicious house wine.
Every September and October we harvest the grapes with the help of our staff and friends. Over the last few summers we've had a lot of help from our friends not just with the harvesting of the grapes but also the making of the wine.
Every year our vines vary in the amount of wine that they yield, ranging from 400 to 1000 litres depending on the weather. Once the grapes have been harvested, Sebastian begins the wine making process in our village winery. The grapes are firstly crushed, left to ferment in large containers overnight for white wine and over a few days for the red and rose wines.
The next phase sees the juice transferred to large stainless steel vats and then the skins crushed for the remaining juice. Over the following weeks the fermentation vats will be cleaned of sediments, a by-product of the wine making process and testing is done once again for the strength and acidity of the wine. As Sebastian keeps telling us, our wine is a living member of our family and needs lots of TLC in order to keep us happy during the summer!
For those of you that are interested in the whole wine making process, you may want to visit our winery situated in the heart of the old nearby village of Sinarades. This is where all the grapes are crushed, turned into wine and stored in huge vats until ready to sell. Just speak to Sebastian or Teresa and they will tell you all about this cottage industry.
